Pastis Project: More Than Just an Apéritif
A while back, I decided I wanted to make my own homemade pastis. Pretty quickly, I noticed something: there’s not a lot of focused information out there. Everything is scattered, hard to find and often incomplete, especially in English.
That’s how the Pastis Project came to life. My goal is to create the go-to resource for all things pastis. A dedicated website (maybe more in the future) where you can explore its rich history, get the information you need, and even track down your local distilleries.
Pastis is more than a drink. It’s a heritage and part of Provence culture. It deserved an online space worthy of its richness.

About Me

I’m a software engineer by day, and a pastis enthusiast by night. Sometimes the night starts at 11 AM though. Born and raised in Avignon, in the heart of Provence, the ritual of the apéritif has been part of my summer afternoons since High School. Today, I live in The Hague, in the Netherlands.
This site is a reflection of my journey: a bridge between Provençal tradition and the world, and the logbook of my anise-flavored explorations.
